At Sanagan’s, one of our core values is to support creativity and development. Over the years, this has meant many things, including specialized training for our staff, introducing new prepared food ideas, establishing an Ontario cheese program, developing charcuterie recipes, creating new marinades for our meats, and creating a specialty grocery line. We are happy with how these initiatives have matured through the years; here are some examples of what you can find in our stores.

HOUSE MADE CHARCUTERIE

This program, developed and managed by our Charcutier Scott Draper, has evolved over the years to include many products and recipes that at one time were staples in French, German, and English butcher shops.

HERE ARE A FEW ITEMS THAT ARE CONSISTENTLY AVAILABLE:

Pâté de Campagne: Classic country—style pork terrine

Duck Liver Mousse: Smooth, rich, and spreadable

Pâté en Croûte: Meat cooked inside a pastry crust, changing seasonally

Head Cheese: Free-form, poached charcuterie made from meat of a pig’s head

Duck Rillettes: Duck confit meat picked and blended with seasonings

Confit: Meats slowly cooked in their own fat, we make duck leg and pork belly confits

Pâté Grandmère: a rich spiced pork terrine originally from Gascony

Black Pudding: A classic part of a full English breakfast

Smoked Liverwurst: A German smooth pork liver spread

Jambon de Paris: A lightly spiced and poached ham from Paris

Mortadella: An emulsified sausage originally from Bologna

Since taking over the larger store, we have been offering prepared foods to our customers who want to leave the cooking to us. Our team of chefs have developed amazing recipes over the years to make our customers’ lives easier and more delicious.

Tourtière: Classic Québécois meat pie made with pork and a blend of savoury spices.

Chicken, Bacon, and Leek Pie: Our take on the classic “pot pie” flavours

Beef Wellington: Individual beef tenderloin steaks wrapped with prosciutto and puff pastry

Cassoulet: Traditional French country slow-cooked meat and bean dish

Shepherd’s Pie: Properly made with Ontario lamb, beef, and pork, and topped with mashed potatoes

Bone Broth: Made with beef, chicken, and aromatics

Rotisserie Chickens: Rubbed with our secret blend of spices, available hot and ready to go (Kensington store only)

Sandwiches: We make our sandwiches fresh daily, using our Ontario meats and served on Blackbird bread (Kensington store only)

SANAGAN’S COUNTY LINE

The County Line is Sanagan’s Meat Locker’s exclusive and premium line of high quality, small-batch artisan products; made by independent Ontario producers working with the finest quality and best tasting foodstuffs available in their specific regions of the province so the “terroir” of the ingredient can be celebrated. (Due to the unique and seasonal nature of the items, availability may be limited)

MANGALITSA CHARCUTERIE

Exclusive to Sanagan’s in Toronto, we offer different types of dry cured and smoked products made from the prized Mangalitsa Pig, a Hungarian breed known for its fat content, making it ideal for charcuterie. The pigs are raised by Barna Bakai, a farmer in the Niagara Region, who brings his meat to be cured and smoked at a few different producers in Ontario, depending on the style of charcuterie.

Lardo: Dry cured fat from the belly, perfect for draping over hot toast

Hungarian Salami: Smoked salami with a bit of warm spice from paprika

Smoked Bacon: Rich, smoky, and fatty, this bacon is the crown jewel of Mangalitsa charcuterie
